"Well, what happened was that the herring was getting less and less"

Well, what happened was that the herring was getting less and less herring, to get during, landed in this country, so we had to make a conscious decision whether we were going to carry on kippering, and if we were, we’d have to get frozen herring in from Iceland or Norway to meet our needs. So obviously once you’re getting frozen herring in, you can kipper all year round, so it seemed sensible to upgrade the factory to meet any criteria that larger markets would need us to have. So, yes, we were quite positive about doing all the work, you know. I mean, it was horrendously expensive at the time but it had to be done.
