Ray was born in Moon Street, South Shields. After leaving school Ray went to cookery school before going to sea with the merchant navy in March 1937. He left the sea in 1953.

"I used to take my own knives, carving knives and boning knives and things like that"
I used to take my own knives, carving knives and boning knives and things like that. I used to get take from being a butcher because they used to use special knives for getting past the bones, you know. They had an awful lot to do, but the bones were good because you can make stock from all the bones.
I used to have a big massive pan on the… boiling nearly all the time. I used to just stick the bones in and then take them out and dump them.
The conditions in most of them were quite good. It depends on yourself how clean you are. Well, we used to clean, well at least I used to make them clean up when I didn’t do it myself, and help them after every meal, and then at nightime you’d give it a good doing over.
